Share Tomatoes

Amateur and seasoned gardeners spend time year round preparing the soil, choosing crops, responding to the elements for a plentiful harvest. Gardening offers reflective moments and demands patience. Abundant gardens are enjoyed by many. What are your favorite tomato recipes? How do you share your garden's abundant crops?


Fresh Tomato Bagel Sandwich

            bagel - split and toasted
            2 tablespoons cream cheese
            1 tomato - thinly sliced
            salt and pepper to taste
            3 fresh basil leaves

Spread cream cheese on bagel halves.
Top cream cheese with tomato slices.
Sprinkle with salt and pepper.
Top with fresh basil leaves.

Fresh Tomato Salsa

            1 cup chopped tomato
            ¼ cup minced onion
            1 clove of garlic, minced
            ½ teaspoon hot pepper, minced
            1 tablespoon lime juice
            ¼ teaspoon salt
            2 tablespoons fresh cilantro, minced

Mix all ingredients together and serve with tortilla chips.
